When summer approaches, hiyashi chuka (chilled Chinese-style noodles) is a popular dish to cool down during the humid weather. Even though it’s labelled as Chinese-style noodles, it’s actually a Japanese dish which started at a restaurant in Jinbocho called Yosuko Saikan.
