Ninben, a bonito specialty shop in Nihonbashi, sells ‘dashi’ as well as many other bonito products.
The Nihonbashi Dashi Bar is a standing bar where you can sample a variety of dashi stocks.
In the shop right beside it, you can try a variety of other dishes including broths which change daily at lunchtime.
If you come here, you’ll learn about the most fundamental elements of Japanese cuisine.
