Echigoya Yasokichi is a restaurant that specialises in dried fish dishes.
The fish is dried in the sun to heighten the flavors.
By grilling the fish over charcoal, the outside of the fish gets crispy while the inside stays tender and flaky.
You can also enjoy a variety of delicious Japanese sashimi.
